Brzyme NP is a neutral protease enzyme, derived from Bacillus Amyloliquefaciens strain selected through submerged fermentation process. Protease decomposes large protein molecules into smaller peptides and amino acids, increasing the free amino nitrogen content for yeast growth, which is beneficial for fermentation and good beer quality.

The recommended usage content is 300-400g/1 ton of dry malt, depending on the quality of the malt and the purpose of the saccharification process, the reaction conditions are adjusted appropriately or determined based on laboratory testing.
