AC-100FG is a food grade cellulase enzyme produced from Trichoderma reesei strain through submerged fermentation, extraction and purification. It contains endoglucanase, Cellobiohydrolase II and β-glucosidase which can cleave the β-1, 4 bond of cellulose molecule, helping to decompose cellulose and release oligosaccharide, glucose.
Using AC-100FG in juice processing can help hydrolyze cellulose to increase juice yield and improve the clarity of the finished product.
Using AC-100FG in wine and beer production can help hydrolyze cellulose in raw materials into sugar, thereby increasing wine yield and making the most of starch.

Impact of pH: The AC-100FG can operate with pH from 4.0-6.0 with optimum pH from 4.5-5.0.
Impact of temperature: The AC-100FG can operate in a temperature range of 30-60°C with an optimum temperature of 50-55°C.
Enzyme inactivation: AC-100FG can be inactivated by increasing the pH to 9 or heating to 80°C and holding for 10 minutes.
Packaging: 25kg, 30kg food plastic drum or 1125kg IBC bag.
Shelf life: Typically six months if stored below 25°C in an unopened, sealed container, away from direct sunlight. Its shelf life will be 18 months provided this product is properly stored at 0∼10°C. Prolonged storage or unfavorable conditions such as higher temperatures may result in higher dosage requirements and therefore require attention.
