DY1-1Pt is an enzyme preparation specially developed for the squid peeling process. The product can quickly peel the squid shell under mild treatment conditions while still ensuring the quality and quantity of squid after peeling, while improving the peeling efficiency.
DY1-1Pt is a mixed protease consisting of an endoproteinase and an exonuclease.

DY1-1Pt has an operating pH range of 7.0 – 9.0. The optimum pH is from 7.5 – 8.5. The operating temperature is from 30-60o C, the optimum temperature range is from 50-55oC.

USAGE PROCESS
The squid is thawed and water is added (water ratio is 1 to 3 times that of raw material), then enzyme is added, temperature is adjusted to 50oC and stirred for 5-20 minutes to separate the squid shell, then washed, next, the raw material is put into the second processing equipment to produce the final product.
Processing conditions: pH 7.0-9.0, temperature 50-55oC, enzyme content 0.1-0.3%, enzyme processing time 5-20 minutes (can be adjusted according to specific production conditions). Enzyme content and processing time need to be adjusted according to the type and size of raw materials to avoid excessive peeling, affecting the taste or poor peeling efficiency.

Storage conditions: This is a biologically active product; At high temperatures, or in strong acid or base environments, the enzyme may be inactivated; Therefore, during transportation and storage, it is necessary to store at temperatures below 10oC, avoid direct sunlight, keep in a dry place, in a sealed package, avoid exposure to rain and prolonged exposure to air.
