It is an endoamylase that can randomly hydrolyze starch, glycogen, and an enzyme that can hydrolyze \u03b1-1, 4 glycosidic bonds, rapidly reducing the viscosity of starch solution and producing soluble dextrin and oligosaccharides. Excessive hydrolysis can produce a small amount of glucose and maltose.<\/p>\n<p>BAA-0100S is derived from a non-genetically modified strain of Bacillus subtilis. At temperatures between 70 and 90\u00b0C, the reaction proceeds rapidly as the temperature increases, and the inactivation of BAA-0100S also proce<\/p>\n<p><strong><em>Effects of calcium on BAA-0100S:<\/em><\/strong><\/p>\n<p>The presence of calcium ions (Ca) plays a protective role in the stability of the enzyme. The activity of BAA-0100S can disappear completely without calcium ions. The pH range of BAA-0100S can be extended by adding calcium ions at appropriate concentrations.
